Homemade Rhubarb Compote

A sweet and sour flavour that compliments a granola bowl so perfectly. I like to pair mine with some goats yogurt, blueberries & my homemade salted maple granola. 

You will need:

  • 1 bunch fresh rhubarb
  • 2 heaped tbsp of coconut sugar or brown sugar 

How to make:

  • Wash & chop rhubarb into medium sized cubes
  • Place into a saucepan on the stove with a little bit of water
  • Add coconut or brown sugar & lightly stir
  • Let simmer for 5 mins
  • Mix up a little when water starts to come through & then continue to let simmer
  • Rhubarb will turn into a thick compote, let sit for 10 mins, don’t stir too much as it’s better a little clumpy
  • Transfer to a container & store in the fridge
