
A sweet and sour flavour that compliments a granola bowl so perfectly. I like to pair mine with some goats yogurt, blueberries & my homemade salted maple granola.
You will need:
- 1 bunch fresh rhubarb
- 2 heaped tbsp of coconut sugar or brown sugar
How to make:
- Wash & chop rhubarb into medium sized cubes
- Place into a saucepan on the stove with a little bit of water
- Add coconut or brown sugar & lightly stir
- Let simmer for 5 mins
- Mix up a little when water starts to come through & then continue to let simmer
- Rhubarb will turn into a thick compote, let sit for 10 mins, don’t stir too much as it’s better a little clumpy
- Transfer to a container & store in the fridge
