Schnitzel has definitely got to be a family favourite in my household & I sure don’t want to miss out on schnitzel night. So here’s my version of a healthy option – give it a go!
Schnitzel details:
- Almond meal
- 1 egg
- Italian herbs
- Chicken or veal
- Olive oil
How to crumb:
- Mix together some almond meal & Italian herbs in a bowl
- Whisk up an egg
- Dip your meat in the egg allowing excess to drain off
- Coat with the almond mixture, repeat until you have used up all of your meat
- Heat some olive oil in a pan & fry off your schnitzels until browned on both sides
I served my schnitzel with a light salad & a sesame mustard dressing. Here is what I used for the salad:
- Spinach
- Cucumber
- Capsicum
- Roasted sweet potato

- 1 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 tbsp organic seeded mustard
- 1 tbsp tamari or soy sauce
- 1 tbsp sesame seeds
