
Blend the following ingredients:
- ½ cup buckwheat flour
- 1 egg
- 1 tsp baking powder
- 1 tsp vanilla
- Dash of almond milk
Once blended:
- Heat 1 tbsp coconut oil on medium heat
- Pour mixture into pan & cook each side for 1-2 mins until you see bubbles & then flip. Repeat until you have used up your mixture. This should make about 3 large pancakes.
- Top with your favourite flavours. My favourites are:
- Blueberries
- Yogurt: Greek or coconut
- Maple Syrup
- Peanut butter
