Chia Berry Muffins


You will need:

  • 1 cup buckwheat flour 
  • 1/2 cup almond meal 
  • 1/2 cup shredded coconut 
  • 1/4 cup chia seeds
  • 2 tsp baking powder 
  • 1 tsp cinnamon 
  • pinch of salt 
  • 2 eggs
  • 3/4 cup almond/coconut milk
  • 1.5 cups mixed berries

Method:

1. Preheat oven to 180 degrees Celsius
2. Mix all dry ingredients in a bowl until combined 
3. Add wet ingredients and continue stirring until mixture is well combined 
4. Add mixed berries & gently fold through mixture 
5. Spray muffin tray with coconut oil and spoon in muffin mixture (makes 12) 
6. Bake in oven for 20 mins 
7. Let cool, dust with coconut flour for decoration & enjoy!!!!
